Mini’s Quick & Easy Banana Pancake Recipe

Anthony ‘Mini’ Minichiello is a former professional Rugby League footballer playing over 300 games with the NRL, representing NSW in State of Origin and also playing for Australia.


Mini’s dietary advice is simple, easy to follow and focuses on the philosophy that “you are what your food eats”. Past participants have reported losses of up to 30kgs and those kilos are still dropping. Mini continues to support past participants on their journey, and that personal connection is having a significant impact on Change Room participants enthusiasm & success.


Mini’s Quick & Easy Banana Pancake recipe


Ingredients:


  • 4 eggs,
  • 1 banana,
  • 3 tablespoons psyllium husk,
  • Grass-fed Butter


Put eggs, banana and psyllium husk in blender. Blend and leave for a few minutes to thicken. Put butter in pan. Pour the mixture in and fry pancake. Flip. Garnish with fruit. Eat!
